My aunt, Maria do Carmo, is a great chocolatier in my
hometown, Brazil... She makes chocolates to die for!  Family
celebration must  have  her chocolates and chocolate cake;
and believe me, for the size of my family, we are very lucky to
have celebrations all year around!  yuuummmmyyyyyy!
Last year, visiting my family, I had the pleasure to eat a
chocolate cake almost every 2 days! I'm not kidding, she made
me try all sort of fillings - coconut, pineapple, passion fruit,
chocolate mousse, chocolate-caramel...
Well, if you know me, you know that she didn't have to try to
hard...
I was a happy "lab mouse", I was in paradise!

Nobody can resist the temptation of my aunt's chocolates! She
has a very busy agenda, teaching the art of the chocolate and
working on her wedding  orders every week!
Just few months ago, she decided to step into the cake
decoration field; and guess what?
She won the first place on her first cake decoration
competition! Her entry was a chocolate cake (of course!) with
coconut cream filling. Her design was a cute gazebo
surrounding  by  nature and birds.

Celebrate an American Tradition!
To celebrate this special day,
Kitchen Kreations would like to share with you a great recipe from Gale Gland,
famous American pastry chef.  It's a very unusual pie crust. I have been using
this recipes for small pies and I just love it! It's delicious, easy and you can
make in minutes with no need to rest or roll out the dough.
Enjoy it!
Ingredients: 3/4 cup sugar
                1/2 cup of egg whites
                3/4 pound sweetened flaked coconut

Need: 24 nonstick mini-muffin cups.

1. Heat the oven to 350 degrees.
2. Mix the sugar, egg whites, and coconut together. Put a spoonful
into each mini-muffin cup. Press the dough into the molds, covering
all area.
3. Bake until golden, about 12 to 15 minutes. Let cool completely in
the pans, then gently remove.
4. Fill it up with a per-cooked filling.

Filling options:   The crust contains coconut, so your best options for
filling are chocolate and vanilla cream.
